Another aromatic herb that comes from the Mediterranean basin. It comes in many varieties, but the best known and most widely used is thyme officinal, from which is extracted an essential oil, thymol, with recognized antiseptic properties.
Its strong and pronounced taste gives relief to meat loaves, terrines, pasta and sauces.
Thyme is also the main ingredient of Herbes de Provence, a mixture of herbs that everyone knows and which can literally be used in all sauces. Finally, it is found, and in good place with sumac, in zahtar (or za’atar), a mixture of spices very much appreciated by the Levantines.
