Warning: there is tarragon and tarragon. There is Russian tarragon, which is not at all interesting from a culinary point of view, and French tarragon, whose sweet aniseed fragrance is a delight for cooks. It is of course this variety that we offer. French tarragon, like many other herbs and spices, comes to us from around the Mediterranean region. It goes wonderfully with fish, poultry and sauces, such as béchamel, tartar and béarnaise. Another must in the spice cabinet.
