Another aromatic herb that comes from the Mediterranean basin. It comes in a host of varieties, but the best known, the most used remains thyme officinal, from which is extracted an essential oil, thymol, with recognized antiseptic properties.
Its strong and pronounced taste gives relief to meatloaf, terrines, pasta and sauces.
Thyme is also the main ingredient of Herbes de Provence, a mixture of herbs that everyone knows and that can literally be used in any sauce. Finally, it is found, and in good place with sumac, in zahtar (or za’atar), a mixture of spices very popular with Levantines.
